We went picking Zucchinis at The Jungle Farm and Leona gave us this awesome recipe! It is wonderfully tasty with a little bit of spice!
Ingredients:
2 1/2 cups flour
1/3 cup cocoa
1/2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp cloves
1/4 cup butter or margarine
1/2 cup oil
1 3/4 cup sugar
2 eggs
2 cups grated zucchini
1 tsp vanilla
1/2 cup sour milk or buttermilk
1/2 cup chocolate chips
1/3 cup cocoa
1/2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp cloves
1/4 cup butter or margarine
1/2 cup oil
1 3/4 cup sugar
2 eggs
2 cups grated zucchini
1 tsp vanilla
1/2 cup sour milk or buttermilk
1/2 cup chocolate chips
Mix together flour, cocoa, baking powder, baking soda, cinnamon, cloves.
In a large mixing bowl, combine butter, oil and sugar. Add eggs and mix well. Stir in zucchini and vanilla. Add dry ingredients alternately with sour milk. Stir in chocolate chips.
Makes 9×13 cake pan. Bake at 350 for 35-40 minutes.
Makes 24 cupcakes if you prefer.
